Some microorganisms grow on the moist or damaged surfaces of fruits during harvesting, processing, or consumption. Proper control of temperature and humidity can significantly reduce their growth. Drying Fruits

The number of microorganisms found in dried fruits is generally low, although bacterial and mold spores may still be present. Random samples may contain large numbers of mold spores, indicating that mold growth and sporulation occurred before or after the drying process. Treatments such as alkaline solutions, sulfur fumigation, blanching, and pasteurization help reduce microbial populations and prevent fruit spoilage.

Fruits offer numerous health benefits, but unfortunately they are not available fresh throughout the year because each fruit has its own growing season. Drying fruits allows them to be consumed year-round. Some producers use preservatives during the drying process, but these substances may be harmful to human health. The best approach is to dry fruits naturally without adding preservatives.

After drying, fruits should be stored in a cool, dry place. Humid environments are unsuitable because they attract insects that can damage dried fruits.

Best Temperature for Storing Dried Fruits

To preserve freshness, dried fruits should be stored at temperatures close to 0°C (32°F). If fruits are not thoroughly dried, they may retain moisture, leading to mold growth over time. Therefore, it is essential to dry fruits completely and store them in a cool, dry location. They should also be kept away from open air to prevent insect infestations. If any dried fruit contains excess moisture, remove the moisture before storage to prevent mold from spreading to other fruits.

Storing Dried Fruits

Proper storage and packaging can significantly extend the shelf life of dried fruits. Suitable storage options include:

Plastic containers with airtight lids
Plastic freezer bags
Vacuum-sealed packaging

Using Preservatives

Chemical preservatives are commonly applied through spraying, dipping, or incorporation into fruit coatings. Waxes, hypochlorites, biphenyl, and sodium o-phenylphenate are often used on the outer surfaces of fruits. Fruits may also be treated with chemicals such as iodine, sulfites, p-phenyl, o-phenylphenol, hexamine, and other compounds.

Carbon dioxide, ozone, ethylene, and chlorinated hydrocarbons may be applied in gaseous or vapor form around fruits. Sulfur dioxide and sodium benzoate are also directly added to fruits and fruit products. The primary purpose of most of these chemicals is their antifungal properties, which help prevent fruit spoilage.

Preventing Spoilage in Specific Fruits

Apples

You have probably noticed that sliced apples or avocados quickly turn brown after being cut. This occurs because cutting releases enzymes that trigger oxidation. Citric acid found in lemons and lemon juice can deactivate these enzymes, slowing the browning process and helping apples and avocados retain their fresh appearance.

Cherries

Cherries are delicate fruits and should be refrigerated immediately after purchase because they quickly lose their juiciness and flavor at room temperature. Washing cherries before storage causes them to absorb water, so they should only be washed just before eating. Store unwashed cherries between paper towels in a cool, dry place. When stored properly, they can remain fresh in the refrigerator for up to one week.

Pomegranates

For long-term storage, you can separate the pomegranate arils and freeze them. After approximately six months of freezing, the arils begin to dry out, so they should ideally be consumed before that time.

Choose healthy pomegranates with intact seeds. Remove the crown and discard any damaged, soft, or brown seeds. Spread the healthy arils in a single layer on a parchment-lined tray, ensuring they do not stick together. Place the tray in the freezer. After one to two hours, transfer the frozen arils to freezer-safe containers, seal them tightly, and return them to the freezer.
